Mix the coconut oil and cacao powder together in a small bowl. If your coconut oil is solidified, warm it until it reaches room temperature (liquid) so you can mix the fudge.
Add ¼ cup of cacao powder at a time or you will find yourself in a cloud of chocolate.
Next, add the raw honey, vanilla, and peppermint oil.
After all the ingredients are mixed, pour the fudge mixture into a candy molds or a coconut oil greased pan.
Lastly, put the fudge in the freezer for an hour to set.
If you would like to cut the fudge into squares, let it come closer to room temperature before slicing.
Store in the fridge and keep cold or it will turn liquid at room temperature.
Notes
If desired, you can also add toppings such as dried fruit, nuts, and/or seeds.
