Ingredients
  • ½ cup Bob's Red Mill Coconut Flour
  • 2 Tbsp. melted coconut oil
  • ½ cup pumpkin puree
  • ¼ cup tahini
  • 3 Tbsp. maple syrup
  • 2 tsp. cinnamon
  • ¼ cup sesame seeds (black, white, or both)
Instructions
  1. Pour sesame seeds onto a plate.
  2. In a mixing bowl, add the coconut flour, coconut oil, and pumpkin puree. Mix to combine.
  3. Add in the tahini, maple syrup, and cinnamon. Mix well until all the ingredients are incorporated. The mixture will be dry - that's totally fine!
  4. Roll the dough into balls by picking up some dough, pressing the mixture, and rolling it between your hands.
  5. Roll the ball in the sesame seeds and set aside.
  6. Continue process until all the dough is used.
  7. You should have 12-15 evenly sized balls.
Notes
The recipe uses a specific brand of coconut flour. If you use a different kind, results may vary.
