Ingredients
  • 4 organic ripe but firm yellow peaches, halved and pitted
  • ½ cup honey
  • ¼ cup white wine vinegar
  • Juice of 1 lemon
  • ¼ tsp. ground cinnamon
  • ¼ tsp. Himalayan pink salt
  • TOPPINGS:
  • ¼ cup chopped pecans
  • 4 Tbsp. goat cheese, crumbled
  • ¼ tsp. ground cinnamon
  • Honey
Instructions
  1. Preheat the oven to 250 degrees F.
  2. In a small bowl, whisk the honey, vinegar, lemon juice, cinnamon, and salt together until mixed.
  3. Arrange peaches cut side down in a medium-sized baking dish and pour honey mixture over the peaches.
  4. Cover the dish with aluminum foil and roast for 20 minutes.
  5. After 20 minutes, remove the foil, flip the peaches over, and spoon the pan juices over the fruit.
  6. Continue roasting for an additional 20 minutes, uncovered.
