Creamy Cucumber & Dill Salad

Ingredients
  • 2 large English cucumbers, sliced thin
  • ¾ cup full-fat coconut milk
  • Juice of 2 lemons
  • 3 Tbsp. fresh dill, chopped
  • 1 tsp. Himalayan Pink Salt
  • ¼ tsp. onion powder
  • ¼ tsp. black pepper
Instructions
  1. Place sliced cucumbers in a medium-sized bowl.
  2. In a separate small bowl, whisk together remaining ingredients. Pour dressing over cucumbers and gently mix until all the cucumber slices are coated in the dressing.
  3. Refrigerate for about 30-45 minutes before serving.
