Ingredients
  • 1 cup dry quinoa
  • 2 cups vegetable broth
  • 1 cup green pitted olives, sliced
  • ¼ cup toasted pine nuts
  • 2 Tbsp. fresh parsley, chopped
  • Dressing:
  • ⅓ cup extra virgin olive oil
  • Juice of 2 lemons
  • Zest of 2 lemons (or 1 Tbsp.)
  • 2 tsp. Himalayan pink salt
  • 1 tsp. honey
  • 1 tsp. onion powder
Instructions
  1. Add quinoa and vegetable broth to a medium sized pot. Bring to a boil and reduce heat. Simmer for about 20 minutes until all the liquid is absorbed and the quinoa is cooked. Fluff quinoa with a fork and add in the olives, pine nuts, and parsley. Whisk together the dressing ingredients and pour into quinoa. Mix well and serve. This is also great served cold over a bed of spinach!
