Wash sweet potato and chop into 1 inch cubes, leaving the skin on.
Spread the sweet potato cubes evenly on baking sheet and drizzle with coconut oil. Sprinkle with dried parsley flakes, onion powder, salt and pepper to your liking. Mix around with your hands until all the potatoes are coated evenly. Bake for 30-35 minutes or until golden brown.
Meanwhile, mix all the dressing ingredients together in a small bowl. Pour over the potatoes once you remove them from the oven and mix until the potatoes are coated evenly. Enjoy!
