Citrus Coconut Macaroons

Serves: 21 macaroons
Ingredients
  • 2 cups unsweetened shredded coconut
  • ½ cup almond flour
  • 1 cup coconut butter, softened
  • ½ cup full-fat coconut milk
  • 3 Tbsp. raw honey
  • Juice and zest of 1 lemon
  • Juice and zest of 1 lime
  • 1 tsp. lemon extract
  • Pinch of Himalayan pink salt
Instructions
  1. Preheat oven to 275 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a medium sized bowl, mix shredded coconut, almond flour, lemon zest, lime zest, and salt.
  4. In a separate bowl, mix coconut butter, coconut milk, honey, lemon juice, lime juice, and lemon extract.
  5. Pour the wet ingredients into the dry ingredients and stir gently until all ingredients are incorporated together.
  6. Use a tablespoon and scoop out mixture to form ping-pong ball sized macaroons. Roll together in your hands to make sure the macaroon holds together. Place on baking sheet.
  7. Repeat process until you get 21 even-sized macaroons.
  8. Bake for about 30 minutes until macaroons are lightly golden on top.
  9. Let macaroons cool for 15-20 minutes before serving.
  10. Store in the refrigerator.
